Summer Salad – Salsa

Hey all! So, you know I love to cook. But, summers are just too hot and too beautiful to be slaving over a stove all day. Today, the hubs and I made the most delicious salad. We combined a bunch of different recipes we love and came up with this! It’s super quick, filling, and flavorful. You could use it as a salsa, but we “beefed” it up with some steak and some fresh garden lettuce.

 

It’s so easy to make!

Combine all ingredients below.

15 oz black beans (drained)

15 oz black eyed peas (drained)

1 Red pepper

2 Roma tomatos

2 Avocados (diced)

1/3 cup red onion

1.5 cups of corn (We used frozen SteamFresh)

1 small bunch cilantro (about 1/2 cup because I love it)

Now, if you want a dressing …

1/2 cup olive oil

2 TBSP red wine vinegar

2 TBSP lime juice

1 tsp kosher salt

1/2 tsp pepper

1/4 tsp garlic power (or to taste)

If you want it be a salsa, serve it with tortilla chips!
